DAL MAKHNI ("lentils with butter") ---------- Ingredients: 1 cup urad dal (black lentils) 7 cups water salt 1 tsp garlic paste 2 tsp ginger paste 1/2 onion, finely chopped 2 tbsp butter 1 tsp red chilli powder 1 tsp fenugreek powder 2 green chillis, chopped 2 tbsp cream 2 tbsp cilantro 2 tbsp lemon juice 1/2 cup crushed tomatoes 1 tsp garam masala Directions: 1) Soak lentils for 1-2 hours. 2) Put lentils in pressure cooker with water, salt, garlic, ginger, and onion. Cook for 25-30 min. 3) Release the pressure. Add butter, red chilli powder, fenugreek powder, crushed tomatoes, and green chillis (optional). Cook for another 5 minutes (not under pressure -- I think). 4) Add 1 tbsp cream and 1 tbsp cilantro (half of each). Serve garnished with garam masala, remaining cilantro and cream. Goes very well with rice or roti.
